We pride ourselves on the flavour of our bacon over all else - it is the yardstick we measure ourselves against. Jowl bacon is taken from the cheek.

The pork itself is the single most important ingredient in any ham and bacon and all of ours comes from our pastured pigs. Nowhere else. It is then slow-cured over 7 days and smoked with hickory and applewood over 12 hours.
